Double Duty Recipe: Pickled Vegetables & Aji Lime Sauce
Pickled Vegetables
Ingredients:
1 cup rice wine vinegar
2 tablespoons maple syrup
2 teaspoons salt
1 cup carrot, thinly sliced into rounds
1 cup daikon, thinly sliced into rounds
1/2 jalapeño, thinly sliced into rounds (optional)
Directions:
In a medium saucepan, combine rice wine vinegar, maple syrup, and salt. Bring to a boil, then remove from heat. Place the sliced vegetables in a large storage container or jar with a tight-fitting lid. Pour the hot vinegar mixture over the vegetables. Let cool, then store.
Aji Lime Sauce
Ingredients:
1 cup light mayonnaise
2 cloves garlic, minced
1/4 cup lime juice
Zest of 2 limes
2 teaspoons smoked paprika
2 cups chopped parsley
3 tablespoons chopped jalapeño (optional)
1 teaspoon salt
Directions:
Combine all ingredients in a mixing bowl. Stir until smooth and well combined. Transfer to a storage container and refrigerate until ready to use.
